Salad is a life saver. On busy weeknights when you have absolutely no idea what to make (or more accurately that you know you have to eat something, but you think the kid working the counter at Little Caesars might judge you for showing up there 3 times in the last week), and don't have very much kicking around the house, it is a simple and healthy meal when paired with some type of protein. Only problem with green salads is.... They are dull. Enter homemade Maple Balsamic Vinaigrette.
There are a few reasons why I love it. First is, it has just the right amount of sweetness. The maple syrup is perfect. Two, I am controlling what goes into it. When you actually read ingredient lists and nutritional info on store bought salad dressings, it can be terrifying. Three, and this may surprise most of you, I like that I am making it myself and not buying it. Don't get me wrong, I am usually a 'queen of convenience'. But there is something about making salad dressing myself that makes me feel like I have my shit together... you know?
And the best part is, there are no measurements! It's all about eyeballing it for me. Once you make it a few times, you'll know how to customize it to your liking. I hope you enjoy it!
Oh also.... and this is going to make me sound like a complete snob.... I recommend actually buying decent olive oil. I always used to buy whatever was cheapest on the shelf. But I read somewhere that quality cooking oil can make a difference in what your food tastes like. And sorry to say, those arrogant chefs on the food network are right. It is a game changer when you actually like the ~flavour~ of the oil you are using. And of course, always support local maple syrup producers whenever possible!!
Simple and Sweet Maple Balsamic Vinaigrette
Ingredients:
- 2 parts olive oil
- 1 part balsamic vinegar
- 1 part grainy mustard
- 1 part maple syrup
- pepper to taste
Steps:
-Throw everything into a mason jar and shake it up until it is well combined.
-All done!
